Zucchini Quiche

​

3 cups zucchini - sliced thin

1 cup Bisquick

1/2 cup Parmesan or Romano Cheese

1/2 cup oil

4 eggs

1/4 tsp black pepper

1/2 tsp parsley flakes

1/2 tsp Marjoram Flakes

1 small onion - chopped

Mix all ingredients and pour into a 9" pie pan.  Bake at 350 degrees for 45 minutes

(Note:  Judy suggests using Italian spice in place of Marjoram and Parsley.  Also, Judy grates most of the zucchini and adds zucchini slices only on the top.)
